Protein Cookie Bites
This high protein cookie contains no grain (gluten free), easy to make and it’s an easy traveling snack. This recipe is natural nutrition for wellness and hormone balance.
1 -1/4 cups canned *chickpeas, well rinsed and patted dry.
2 tsps. vanilla extract
1/2 cup + 2 Tbs. natural peanut butter or almond butter (I prefer almond butter)
1/4 cup honey
1 tsp. baking powder
pinch of salt
1/2 cup chocolate chips
* 15 oz can of garbanzo beans works well.
Preheat oven to 350º F
Combine all ingredients except for chocolate chips in a food processor and process until very smooth. Scrape sides and top until well combined.
Put in chocolate chips and stir, or pulse once or twice. Mixture will be thick and sticky.
With wet hands, form into 1 1/2 inch balls. Place on a piece of parchment paper or silicon baking sheet, press down lightly on the balls.
Bake for 10-12 minutes (they won’t rise much).
Yields about 24 cookies.
